Pancakes are pretty basic. And to be honest, can be pretty boring. But add a little chocolate and fruit and you’ll be shooting out of bed Sunday morning for breakfast.

What you need

2 bananas (ripe, brown, thawed from the freezer, whatever!)

2 tbsp olive oil (plus some for the pan)

1 cup of water

1 tbsp of liquid sweetener (optional)

1 cup of flour

1/4 cup of cocoa

2 1/2 tsp baking powder

dash of salt

handful of raspberries (optional)

handful of chocolate chips (optional)

Put a little oil on a pan then start heating it on medium. Mash up the bananas with the rest of the wet ingredients then mix in the dry. Toss in some fruit and chocolate if you’d like. Scoop some batter into your pre-heated pan, flip when bubbles start popping in the uncooked side then just keep an eye on them to make sure they don’t burn.

Throw any leftover batter in the fridge to have pancakes during the week or use it all and keep some cold pancakes kicking around for an afternoon snack.
